      • A sadly now-departed Cajun South Louisiana cook of some note, Justin (pronounced Juus-Tan) Wilson oft-quoted himself: just drink the wine you like and tell that fancy waiter feller to keep his white wine for someone else’s fish. He was a safety engineer who parlayed a particulary Bayou-style of country (not Creole but spicier!) kind of cookery into a public television series of differing but same shows which time-to-time might be found wandering around specialty channels (YouTube, perhaps?) Sort of like Floyd On Food, etc.
