“Make Second Pan! – Someone Ate The First!”

makin’ cornbread fine:

sweet onion; jalapeno;*

and, hog-jowl bacon!

 

  • (Ran out of jalapeno for the second pan – since the damfool cook, me, ate all but three of the nine cut squares still steaming: yummm) and had to substitute some smoked and dried red-ripe jalapenos instead – my version of ground chipotle powder – a teaspoon in the batter still brought forth brow-sweat beads and tingle. But a half-teaspoon joined a pair of chunked, mostly pith-and-seedless jalapenos in the first iteration.  When the sweet onion and jalapeno meld in the baking batter taste past heaven occurs.)
