  • (Gombo is the West African cognate for okra, and some purists in both South Carolina and Louisiana insist it can not be Gumbo without Gombo.  I agree.  Those in The Bayou may tighten their stew with ground sassafras leaves and eschew the stewing of okra. Others in Carolina call that heresy and and demand okra alone.  I pray in both churches…but then I also include both blue crab quartered after cleaning but not shelling along with shrimp and scallops in my quail and rabbit gumbo. Sue me!)
